Venison with a mushroom and cranberry red wine reduction

    We LOVE venison and should be getting some fresh meat soon so I decided to make the last of what we had. This could probably be made with some beef or would be great with bison or elk.

    Sautéed mushrooms with some butter
    Added some red wine (we like Roscatto)
    Added fresh pureed cranberries (no sugar in mine)
    Let reduce till thick.

    Pan seared some venison and kept it pretty pink.

    Roasted some Brussels sprouts with some olive oil.

    Spooned the mushroom and wine reduction over, salted and devoured.

    Hahaha, Wisconsin but have to wait till our friend gets us more :)

    Also made a paleo pumpkin pie with a nut crust and pumpkins from my garden to Thanksgiving.

    I just used ground almonds and walnuts for the crust. It was so so yummy!!!!!!!!

    Oh, and my sister's baby daddy sent her back with some venison and she does not eat it so I am letting the DD get some first then we get the rest.

    Thanks - that looks delicious - I think I will treat myself at Christmas.......

    I am going to try it with sweet potato...

    Paul Prudhomme has a great recipe for sweet potato pie that has always been my favorite.

    I don't usually eat venison but a hunter that we know shot a deer and gave us the meat. I did some research and apparently deer shot in Virginia almost all have chronic wasting disease. I'm worried that we should not eat it but my husband says it is OK. Have you heard anything about this?
