Raw oysters - a little cured

    I had to learn to love oysters and am always a bit circumspect about uncooked seafood - more so that prepared by myself rather than that prepared by a fancy Japanese restaurant).

    This is how I prepare fresh uncooked oysters - to cure them a little and beef up the food safety side of things. They are delicious.

    Squeeze fresh lemon onto the oysters, then add a drop or two of soy sauce (or a sprinkle of salt), and finish with ginger juice (made using a Japanese ginger grater). What a combo!!

    Add some chili if you like it.
