    There is variety of oysters.
    Their taste varies, but I have newer seen you distinguishing between them.

    What about this Invasive Oyster Crassostrea gigas
    It comes with rather impressive analysis.
    Its origins are from:
    Pacific oyster (Crassostrea gigas Thunberg)

    I like salty oysters. In summer months here the oysters are light stressed and not as salty so I add salty hot sauce.
