Leg of Lamb

    Leg of Lamb with a rosemary red wine cranberry sauce.

    I do not have exact amount but just toss stuff together.

    Fresh whole cranberries
    About a cup of red wine
    Rosemary (I only had dried but fresh would be better)
    2 poundish leg of lamb
    beef broth

    Heat up the cranberries in some water and the wine till the cranberries pop. Mash up a bit with a hand beater.
    Pout the lamb in a roasting pan, fat side up.
    Pour the cranberry mixture over the top and add some of the beef broth to the bottom of the pan.

    Cook at 400 F for 30 minutes per pound or until internal temp is either 160-165F for a rarer of 170-175F for well done. Take from oven, remove from pan and cover with foil for about 20 minutes to let it rest.

    Take the sauce and reduce to the thickness desired.

    Cut and enjoy.

    We had grilled leg of lamb on Friday night. IT. WAS. AMAZING.
